Because of the climate here, and this is the most counterintuitive thing about drying a house in Western Washington. From roughly October through May the outdoor air in Thurston County is near saturation, so opening the house pulls in air that is already carrying about as much moisture as it can hold. There is nowhere for the water in your framing to go, and when that wet air hits cool surfaces indoors it deposits moisture rather than removing it. Drying here requires a closed envelope and mechanical dehumidification.
